Located in a sleepy location north of downtown Champaign, Escobar’s is still a bit of a hidden gem in the area, serving “New” Latin American cuisine; a “foodie” experience in a casual atmosphere. Start with scallop and chorizo nachos, then move on to roasted chicken in mole sauce or phyllo-wrapped lamb loin filled with goat cheese. Dessert is a must with flourless chocolate cake, or maybe the mango rum cheesecake. On Sundays, come for brunch with a Latin twist such as poached eggs over pulled pork or scrambled egg and black bean tortas.
